Party Pleaser - Moldovian Pan Fried Pie

- 2 cups chopped apples + 2-3 tbsp sugar, cinnamon shopping list

- 2 cups chopped peaches or apricots + 2-3 tbsp sugar shopping list

- 2 cups grated pumpkin flesh + 2-3 tbsp sugar, cinnamon, cloves, cardamom shopping list

- 2 cups cooked minced meat (leftovers are perfect!) + 2-3 tbsp chopped onions, sauteed in butter shopping list

- 2 cups mashed potatoes (leftovers!) + 2-3 tbsp chopped onions, sauteed in butter shopping list

- 2 cups sauerkraut sauteed with 2-3 tbsp chopped onions shopping list

- 2 cups farmers cheese + 2-3 tbsp sugar, cinnamon, raisins shopping list

- 2 cups mushrooms sauteed with onions or shallots, salt, pepper shopping list

- 2 cups feta cheese or goat cheese + fresh dill weed + black olives shopping list
How to make it
- Crust:

- Sift the flour, add 1/2 tsp salt and put it on the kneading board making a little nest
- Pour enough buttermilk or a mix of half water and half sour cream into your "nest" and cut in with the knife, forming large crumb
- Mix well and make the soft non-sticky dough.
- Add water or flour if needed.

- Form a ball and divide into 3.

- Prepare your filling of choice

- For each piece of dough:
- roll out on a floured surface until form a thin round crust about 15-16 inches in diameter
- put filling in the middle and spread to about 8 inches in diameter
- fold the non-filled portions of the dough over the filling forming a pentagon - this is a traditional shape, but you can do octagons or triangles - whatever your sense of beauty will tell you.
- Using your rolling pin, roll over the folded edges a few times to make them stick together (lightly)

- Heat the oil in the frying pan over medium heat
- Fry placinta pie folded side down first for about 3-4 minutes, turn over (you can use 2 spatulas or your hands if you are brave), then 3 minutes on the other side.
- Let them cool a little and cut into 6-8 pieces, like pizza.
- They make perfect party food.
- Sweet filling pies could be sprinkled with confection sugar lightly.
