Ingredients
  • 2-3 cups all-purpose flour
  • buttermilk or water mixed with sour-cream
  • salt
  • cooking oil
  • -
  • Filling of your choice, see some samples below, or add your own

  • 2 cups chopped apples + 2-3 tbsp sugar, cinnamon
  • -
  • 2 cups chopped peaches or apricots + 2-3 tbsp sugar
  • -
  • 2 cups grated pumpkin flesh + 2-3 tbsp sugar, cinnamon, cloves, cardamom
  • -
  • 2 cups cooked minced meat (leftovers are perfect!) + 2-3 tbsp chopped onions, sauteed in butter
  • -
  • 2 cups mashed potatoes (leftovers!) + 2-3 tbsp chopped onions, sauteed in butter
  • -
  • 2 cups sauerkraut sauteed with 2-3 tbsp chopped onions
  • -
  • 2 cups farmers cheese + 2-3 tbsp sugar, cinnamon, raisins
  • -
  • 2 cups mushrooms sauteed with onions or shallots, salt, pepper
  • -
  • 2 cups feta cheese or goat cheese + fresh dill weed + black olives

Directions
  1. Crust:

  3. Sift the flour, add 1/2 tsp salt and put it on the kneading board making a little nest
  4. Pour enough buttermilk or a mix of half water and half sour cream into your "nest" and cut in with the knife, forming large crumb
  5. Mix well and make the soft non-sticky dough.
  6. Add water or flour if needed.
  7. -
  8. Form a ball and divide into 3.

  10. Prepare your filling of choice

  12. For each piece of dough:
  13. roll out on a floured surface until form a thin round crust about 15-16 inches in diameter
  14. put filling in the middle and spread to about 8 inches in diameter
  15. fold the non-filled portions of the dough over the filling forming a pentagon - this is a traditional shape, but you can do octagons or triangles - whatever your sense of beauty will tell you.
  16. Using your rolling pin, roll over the folded edges a few times to make them stick together (lightly)

  18. Heat the oil in the frying pan over medium heat
  19. Fry placinta pie folded side down first for about 3-4 minutes, turn over (you can use 2 spatulas or your hands if you are brave), then 3 minutes on the other side.
  20. Let them cool a little and cut into 6-8 pieces, like pizza.
  21. They make perfect party food.
  22. Sweet filling pies could be sprinkled with confection sugar lightly.
