Chicken and Vegetable Scampi

- 3 tbsp. butter or margarine shopping list
- 1 pkg. (1 lb.) Parmesan garlic Seasoned chicken breast strips shopping list
- 1 red pepper, cut into 1 inch pieces shopping list
- 1 box (10 oz.) frozen broccoli florets, thawed and drained shopping list
- 1/3 cup chicken broth shopping list
How to make it
- In a large nonstick skillet, melt 2 tbsp. butter over medium-high heat and cook chicken and red pepper, stirring occasionally for about 6 minutes or until chicken is done.
- Add broccoli, chicken broth and remaining tablespoon butter to skillet
- Reduce heat to medium, cover and cook 2 minutes or until broccoli is heated through.
- Serve, if desired, over pasta or rice.
