Low Fat Scotch Eggs

- 10 eggs shopping list
- 1 pound turkey sausage shopping list
- 2/3 cups low fat crackers shopping list
How to make it
- Hard cook 8 of the eggs. Take the shell off.
- Divide turkey sausage into 8 portions. Shape each portion into a 4 inch round patty. Wrap each patty around 1 hard cooked egg, covering egg completely.
- In a small bowl beat the remaining eggs. Roll each sausage wrapped egg in the beaten eggs, then roll in crushed crackers.
- Arrange eggs in a shallow baking pan. Bake in a 375 degrees oven for 25-30 minutes or until sausage is no longer pink.
- Serve warm or cold with chili sauce.
