Ingredients
  • 1 baked 9 inch pie shell
  • 1/2 cup sugar
  • 5 tbsp flour
  • 1/4 tsp salt
  • 1 cup fat free evaporated milk
  • 1 cup cofee
  • 2 egg yolks, slightly beaten
  • 1 tbsp butter
  • 1/2 tsp vanilla
  • 3 ripe bananas
  • whipped cream

Directions
  1. Combine sugar, flour, and salt in the top of the double boiler. Combine milk and coffee.
  2. Add slowly to sugar mixture. Cook and stir till thickened.
  3. Cook 10 minutes longer, stirring constantly.
  4. Mix port of hot mixture with egg yolks, then por this into the hot mixture.
  5. Cook 1 minutes more.
  6. Stir in butter and vanilla.
  7. Cool.
  8. Alternate layers of banana slices and fillng in pie shell.
  9. Garnish with whipped cream.
