How to make it

  • In a 12 inch skillet cook vegetables, tomatoes, garlic and ground red pepper over medium heat
  • Bring to a boil
  • Reduce heat to low
  • Add smoked sausage and cook about 2 minutes
  • Stir in beans and cook 1-2 minutes longer, until heated through
  • Garnish with sliced fresh tomato
  • ***Stove Top: add sausage to 2-3 inches boiling water. Simmer for 10-12 minutes
  • ***Microwave: Place sausage in microwave safe dish with 1/2 inch water. Microwave on high for 4-6 minutes. Allow sausage to sit for 1 minute prior to serving
  • ***Grill: Grill over medium-high heat for 12-14 minutes, turning frequently
