How to make it

  • Preheat oven to 375F
  • Slice chicken into 1 inch wide strips and saute in oil; reserve
  • In a bowl, blend corn, scallions, red onion and peppers with cottage cheese and half the cilantro
  • In the center of each tortilla place about 1/3 cup of cottage cheese-vegetable mixture then add the sauteed chicken
  • Top the chicken with the remaining cottage cheese-vegetable mixture and roll up
  • Place each tortilla in an 11x7x1.5 inch baking dish, seams side down
  • Top with picante sauce, taco sauce or salsa
  • Bake for 20-25 minutes, or until thouroughly heated
  • Garnish with remaining cilantro
  • Serving suggestion: sour cream, rice and black beans
