Chicken and Cheese Burritos

Ingredients
  • 1 lb. boneless, skinless chicken breast, cut into 1 inch wide strips
  • 1 tbsp. vegetable oil
  • 1/2 cup corn (thaw if frozen, drain if canned)
  • 2 scallions, thinly sliced
  • 2 tbsp. red onion, finely chopped
  • 1 sweet red bell pepper, diced
  • 1 yellow or green bell pepper, diced
  • 2 tbsp. fresh cilantro, finely chopped
  • 8 oz. cottage cheese
  • 1 cup picante sauce, taco sauce or salsa
  • 8 (6inch) flour tortillas

Directions
  1. Preheat oven to 375F
  2. Slice chicken into 1 inch wide strips and saute in oil; reserve
  3. In a bowl, blend corn, scallions, red onion and peppers with cottage cheese and half the cilantro
  4. In the center of each tortilla place about 1/3 cup of cottage cheese-vegetable mixture then add the sauteed chicken
  5. Top the chicken with the remaining cottage cheese-vegetable mixture and roll up
  6. Place each tortilla in an 11x7x1.5 inch baking dish, seams side down
  7. Top with picante sauce, taco sauce or salsa
  8. Bake for 20-25 minutes, or until thouroughly heated
  9. Garnish with remaining cilantro
  10. Serving suggestion: sour cream, rice and black beans
