FABULOUS FAVA BEANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 1 pound dried yellow fava beans
  • 1 medium white onion diced
  • 2 plum tomatoes diced
  • 1/4 cup fresh cilantro chopped
  • 1 teaspoon salt

Directions
  1. Cook beans according to package directions.
  2. When done add tomatoes, onions and salt then simmer 30 minutes.
  3. Add cilantro and serve immediately.
