Kale Sausage and Lentil Skillet

- 3 tsp. olive oil (divided) shopping list
- 1 package pre-cooked chicken sausages shopping list
- 1 large onion, thinly sliced shopping list
- 2 tbsp. chopped garlic shopping list
- pinch of crushed red pepper, or to taste shopping list
- 2 1/2 cups water shopping list
- 1 1/2 cup red wine shopping list
- 1 cup lentils shopping list
- 12 cups chopped kale leaves, stems removed shopping list
- 1 tsp. fresh sage, chopped shopping list
- 1/4 tsp. salt shopping list
- pepper to taste shopping list
How to make it
- In large skillet, heat 1 tsp. of oil over medium heat
- Add sausage, cook until browned on all sides, 4-5 minutes
- Transfer to cutting board
- Add remaining oil and onion to pan and cook until browned, 4-5 minutes
- Add garlic and red pepper and cook, stirring, until fragrant
- Add water and wine, increase heat to high and bring to boil, scrapping any browned bits
- Add lentils, reduce heat to simmer, and cook, partially covered, 40 minutes
- Add kale, sage and salt and cook, covered, stirring occasionally, until lentils and kale are tender, about 10 more minutes
- Slice sausauge, stir into pan with pepper
- Cover and cook until heated through, about 2 minutes
