Kale Sausage And Lentil Skillet Recipe

Ingredients
  • 3 tsp. olive oil (divided)
  • 1 package pre-cooked chicken sausages
  • 1 large onion, thinly sliced
  • 2 tbsp. chopped garlic
  • pinch of crushed red pepper, or to taste
  • 2 1/2 cups water
  • 1 1/2 cup red wine
  • 1 cup lentils
  • 12 cups chopped kale leaves, stems removed
  • 1 tsp. fresh sage, chopped
  • 1/4 tsp. salt
  • pepper to taste

Directions
  1. In large skillet, heat 1 tsp. of oil over medium heat
  2. Add sausage, cook until browned on all sides, 4-5 minutes
  3. Transfer to cutting board
  4. Add remaining oil and onion to pan and cook until browned, 4-5 minutes
  5. Add garlic and red pepper and cook, stirring, until fragrant
  6. Add water and wine, increase heat to high and bring to boil, scrapping any browned bits
  7. Add lentils, reduce heat to simmer, and cook, partially covered, 40 minutes
  8. Add kale, sage and salt and cook, covered, stirring occasionally, until lentils and kale are tender, about 10 more minutes
  9. Slice sausauge, stir into pan with pepper
  10. Cover and cook until heated through, about 2 minutes
