How to make it

  • In large skillet, heat 1 tsp. of oil over medium heat
  • Add sausage, cook until browned on all sides, 4-5 minutes
  • Transfer to cutting board
  • Add remaining oil and onion to pan and cook until browned, 4-5 minutes
  • Add garlic and red pepper and cook, stirring, until fragrant
  • Add water and wine, increase heat to high and bring to boil, scrapping any browned bits
  • Add lentils, reduce heat to simmer, and cook, partially covered, 40 minutes
  • Add kale, sage and salt and cook, covered, stirring occasionally, until lentils and kale are tender, about 10 more minutes
  • Slice sausauge, stir into pan with pepper
  • Cover and cook until heated through, about 2 minutes

    Gotta try to make a vegetarian version of this! (Fake sausage has become pretty realistic, and I love lentils.) Thanks.
