Ingredients
  • 3 cups raw vegetables, shredded or diced
  • Any combination of fresh vegetables can be used (cabbage, green beans, spinach, corn, carrots, summer squash, onionsn, peppers, potatoes, tomatoes etc.)
  • 1/2 tbsp. margarine
  • 1/4 cup water
  • salt
  • pepper
  • fresh herbs

Directions
  1. Wash, shred or slice fresh vegetables
  2. In a large frying pan, melt margarine
  3. Add water and vegetables to the frying pan
  4. Cook over low heat until vegetables are crisp and tender
  5. Stir occasionally to keep vegetables from sticking; you may need to ad a little more water if vegetables are not "done."
  6. Season with salt, pepper and fresh herbs
  7. Serve with rice, pasta/noodles, or in a casserole dish over mashed potatoes
