Marinated Rabbit

- 180mL (3/4 cup) lemon juice shopping list
- 15mL (1 tbspn) grated lemon rind shopping list
- 180mL (3/4 cup) olive or canola oil shopping list
- 5g (1 tspn) salt shopping list
- 1g (1/4 tspn) ground pepper shopping list
- 1g (1/4 tspn) ground marjoram shopping list
- 30g (2 tbspn) brown sugar shopping list
- 60g (1/4 cup) finely minced onion shopping list
- 1 clove garlic, minced shopping list
- 1 dressed rabbit, about 1.5 kg shopping list
How to make it
- Mix first 9 ingredients to make marinade and place in a large shallow glass dish
- Place rabbit in marinade, turning to coat all surfaces
- Cover and marinate several hours or overnight, basting with marinade occasionally
- Drain rabbit and reserve marinade
- Place rabbit on a rack in a shallow roasting pan
- Roast, uncovered, at 180 deg C (350F) for 1 hour
- While rabbit is roasting, bring marinade to a boil and keep warm
- Use heated marinade to baste rabbit occasionally while roasting
- The marinade and pan juice make a great gravy when serving
