Marinated Rabbit Recipe

Ingredients
  • 180mL (3/4 cup) lemon juice
  • 15mL (1 tbspn) grated lemon rind
  • 180mL (3/4 cup) olive or canola oil
  • 5g (1 tspn) salt
  • 1g (1/4 tspn) ground pepper
  • 1g (1/4 tspn) ground marjoram
  • 30g (2 tbspn) brown sugar
  • 60g (1/4 cup) finely minced onion
  • 1 clove garlic, minced
  • 1 dressed rabbit, about 1.5 kg

Directions
  1. Mix first 9 ingredients to make marinade and place in a large shallow glass dish
  2. Place rabbit in marinade, turning to coat all surfaces
  3. Cover and marinate several hours or overnight, basting with marinade occasionally
  4. Drain rabbit and reserve marinade
  5. Place rabbit on a rack in a shallow roasting pan
  6. Roast, uncovered, at 180 deg C (350F) for 1 hour
  7. While rabbit is roasting, bring marinade to a boil and keep warm
  8. Use heated marinade to baste rabbit occasionally while roasting
  9. The marinade and pan juice make a great gravy when serving
