How to make it

  • Mix first 9 ingredients to make marinade and place in a large shallow glass dish
  • Place rabbit in marinade, turning to coat all surfaces
  • Cover and marinate several hours or overnight, basting with marinade occasionally
  • Drain rabbit and reserve marinade
  • Place rabbit on a rack in a shallow roasting pan
  • Roast, uncovered, at 180 deg C (350F) for 1 hour
  • While rabbit is roasting, bring marinade to a boil and keep warm
  • Use heated marinade to baste rabbit occasionally while roasting
  • The marinade and pan juice make a great gravy when serving
