Potato salad German style

- SALAD shopping list
- Spanish (red onion) finely chopped (can substitute green onions/scallions) shopping list
- 2 hardboiled eggs, quartered shopping list
- 4 dill gherkins, diced shopping list
- can of 4 bean mix, drained shopping list
- 1 can whole corn kernels, drained shopping list
- potatoes, cooked until firm but not mushy shopping list
- Fresh (if in season, lightly steamed) or canned asparagus, well drained shopping list
- DRESSING shopping list
- Classic vinaigrette (oil and lemon/vinegar) shopping list
- (aside: a flavoured oil or vinegar might add some zest, maybe garlic oil and raspberry vinegar?) shopping list
- A really good mayonnaise dressing shopping list
How to make it
- METHOD
- Mix dressing ingredients and set aside
- Cook potatoes whole until firm, skin on. Large dice
- Place onion and potato while still warm into bowl
- Pour over dressing and allow to soak through the onion and potato mix
- Cool
- Add diced gherkin, corn, bean mix and mix through
- Finally, add the mayonnaise and mix gently
- Decorate with fresh herbs of choice
- NOTE:
- Can add smoked salmon or canned tuna to make a truly complete meal on it's own!
