Ingredients
  • 1 tbsp. oil
  • 2 cups instant white rice, uncooked
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 4 cups assorted cut up fresh vegetables or 1 pkg. (16 oz.) frozen stir fry vegetables
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1/2 tsp. black pepper
  • 1/2 tsp. minced garlic
  • Cashews

Directions
  1. Prepare rice as directed on package
  2. Cook and stir chicken (stir fry) in oil in skillet on medium-high heat for 5 minutes or until cooked through
  3. Add vegetables (vegetables)
  4. Mix water, soy sauce, pepper and garlic (sauce mixture); add to skillet
  5. Cook on medium heat for 3-5 minutes
  6. Serve over rice
  7. Top with cashews (add ons)
  8. ****Try these variations:
  9. Pork -
  10. (stir fry) 1 lb. pork tenderloin; cut into 1 inch chunks
  11. (vegetables) carrots, onions, green peppers; cut into chunks
  12. (add ons) top with 1 can (8 oz.) pineapple chunks; drained
  13. Beef -
  14. (stir fry) 1 lb. beef sirloin; cut into thin strips
  15. (vegetables) mix 1/2 cup teriyaki sauce and 1/2 tsp. ground ginger and 1/2 tsp. minced garlic
  16. (add ons) sprinkle with chinese noodles
  17. Vegetarian -
  18. (stir fry) 1 pkg. (14 oz.) extra firm tofu; cut into 1/2 inch cubes
  19. (vegetables) mix 1/2 cup stir fry sauce and 1/2 tsp. ground ginger and 1/2 tsp. minced garlic
  20. (add ons) sprinkle with peanuts
