How to make it

  • In a large skillet, cook chicken in hot oil until evenly browned
  • Remove chicken; keep warm
  • Add broth and water to skillet; stir
  • Bring to a boil
  • Stir in mushrooms, onion, peas and rice
  • Top with chicken; cover
  • Cook on low heat for 5 minutes or until chicken is cooked through and rice is tender
  • Let stand for 5 minutes; stir
