20 Minute Chicken and Brown Rice Pilaf

- 4 boneless skinless chicken breast halves (1 1/4 lb.) shopping list
- 1 tbsp. oil shopping list
- 1/2 cup water shopping list
- 1 can (10 1/2 oz.) chicken broth shopping list
- 1 cup sliced mushrooms shopping list
- 1 small onion, chopped shopping list
- 1 cup peas shopping list
- 2 cups instant brown rice, uncooked shopping list
How to make it
- In a large skillet, cook chicken in hot oil until evenly browned
- Remove chicken; keep warm
- Add broth and water to skillet; stir
- Bring to a boil
- Stir in mushrooms, onion, peas and rice
- Top with chicken; cover
- Cook on low heat for 5 minutes or until chicken is cooked through and rice is tender
- Let stand for 5 minutes; stir
