Asian Broccoli and Red Pepper with Peanuts

Ingredients
  • 1/2 cup vegetable broth, divided
  • 1 1/2 cups sliced green onions
  • 1 tbsp. minced garlic
  • 6 cups chopped broccoli
  • 2 cups chopped red pepper
  • 3 tbsp. soy sauce
  • 1/4 cup dry roasted peanuts, chopped
  • Hot cooked instant brown rice

Directions
  1. In a large skillet, heat 1/4 cup of the broth on medium-high heat
  2. Add onions and garlic; stir fry for 2 minutes
  3. Add remaining 1/4 cup broth, broccoli, red pepper and soy sauce
  4. Bring to a boil; reduce heat to low
  5. Simmer for 5-6 minutes or until broccoli is tender, stirring occasionally
  6. Stir in peanuts
  7. Serve over rice
