Asian Broccoli and Red Pepper with Peanuts

- 1/2 cup vegetable broth, divided shopping list
- 1 1/2 cups sliced green onions shopping list
- 1 tbsp. minced garlic shopping list
- 6 cups chopped broccoli shopping list
- 2 cups chopped red pepper shopping list
- 3 tbsp. soy sauce shopping list
- 1/4 cup dry roasted peanuts, chopped shopping list
- Hot cooked instant brown rice shopping list
How to make it
- In a large skillet, heat 1/4 cup of the broth on medium-high heat
- Add onions and garlic; stir fry for 2 minutes
- Add remaining 1/4 cup broth, broccoli, red pepper and soy sauce
- Bring to a boil; reduce heat to low
- Simmer for 5-6 minutes or until broccoli is tender, stirring occasionally
- Stir in peanuts
- Serve over rice
