How to make it

  • In a large skillet, heat 1/4 cup of the broth on medium-high heat
  • Add onions and garlic; stir fry for 2 minutes
  • Add remaining 1/4 cup broth, broccoli, red pepper and soy sauce
  • Bring to a boil; reduce heat to low
  • Simmer for 5-6 minutes or until broccoli is tender, stirring occasionally
  • Stir in peanuts
  • Serve over rice
