Chicken And Cheese Enchiladas Recipe
I got this recipe from a friend and simply adore it. It is so easy to make and my husband loves it. It's Americanized Mexican, but we both love Mexican food.

Ingredients
  • 8-10 inch tortillas
  • 1 (10 3/4 oz) can cream of chicken soup
  • 1 (8oz) ctn. sour cream
  • 1 small can diced green chiles
  • 1 cup shredded cooked chicken
  • 8 oz or 2 cups shredded cheese, cheddar, colby jack, mexican blend

Directions
  1. Mix together soup, sour cream, green chiles and 1 cup of shredded cheese.
  2. Place some chicken down the center of one tortilla and add two dollops of soup mixture on top of the chicken.
  3. Roll up tortilla and place in 9x13 pan.
  4. Repeat steps 2 & 3 for each tortilla.
  5. Cover tortillas in pan with remaining soup mixture and top with remaining cheese.
  6. Bake at 350 for about 25 minutes or until cheese it slightly browned.
