How to make it

  • In a large resealable platic bag, combine the olive oil, garlic, oregano, salt and lime juice. Shake the bag to mix all the ingredients. If the marinade is too tart, add more oil. If it needs a more tartness, add lime juice. You should be able to taste the garlic and salt, but neither flavor should overpower. Put the tenderloins into the bag, seal it and turn to coat the meat. Place the bag in the refrigerator for between 2 and 5 hours.
  • Preheat the grill to cook at medium heat.
  • Oil the grill grate lightly and discard the marinade. Grill the tenderloins for between 20 to 30 minyes (or to desired doneness).
