GreekStyle Pork Tenderloin Recipe
It's the tangy marinade in this recipe that makes the tenderloin even more tender. The pork is sealed in a plastic bag with a mixture of fresh lime juice, olive oil, garlic and oregano for several hours before it is grilled.

Ingredients
  • 2 (1 lb) pork tenderloins
  • 6 tsp oregano, dried
  • 2 tsp salt
  • 3/4 C olive oil
  • 6 sliced garlic cloves
  • 1 1/2 C lime juice, fresh

Directions
  1. In a large resealable platic bag, combine the olive oil, garlic, oregano, salt and lime juice. Shake the bag to mix all the ingredients. If the marinade is too tart, add more oil. If it needs a more tartness, add lime juice. You should be able to taste the garlic and salt, but neither flavor should overpower. Put the tenderloins into the bag, seal it and turn to coat the meat. Place the bag in the refrigerator for between 2 and 5 hours.
  2. Preheat the grill to cook at medium heat.
  3. Oil the grill grate lightly and discard the marinade. Grill the tenderloins for between 20 to 30 minyes (or to desired doneness).
