How to make it

  • Pick over beans, and soak over nite. Cut the pork into small pieces.
  • After washing beans, cover with cold water in a heavy pan. Add all ingredients and spices. Stir, bring to a boil. Reduce heat to medium simmer.
  • Cook until beans are tender and gravy is as thick as you like it.
