Tater Dumplings Recipe
My grandmother gave me this recipe, she said they used it to stretch meals during the depression. A few potatoes could feed a tableful of people. I take a short cut by using the tube biscuits.

Ingredients
  • 4 potatoes, peeled and diced
  • water
  • Milk
  • 1 stick of butter or margarine
  • salt and pepper
  • 3 cans of tube biscuits

Directions
  1. Cover potatoes with water in a Dutch oven and cook until soft.
  2. Mash part of the potatoes with a potato masher.
  3. Add milk until you have the pot about 3/4 full.
  4. Add butter, salt and pepper to taste, and bring to a gentle boil.
  5. Cut biscuits into fourths and drop into the broth, stir well.
  6. Reduce heat to a simmer.
  7. Cover and cook for 10 minutes.

My mother used to make these, we never knew we were poor! This along with some fried chicken.. Yummmm


Oh yeah... I found those frozen biscuits, thawed .. cut in quarters.. are 'real close' to moms!
