Ingredients
  • 1 box betty crocker carrot cake mix
  • 2 eggs
  • 1 c. sour cream
  • 1/2 c. veg. oil
  • 1 small can crushed pineapple w/juice
  • 1 c. grated carrot
  • 1 c. raisens ( reg. or golden)
  • 1 c. chopped walnuts
  • FROSTING;
  • 1 can ready made cream cheese frosting
  • 1 8oz. package cream cheese
  • 1/2 c. drained well crushed pineapple
  • 1/4 c. chopped walnuts

Directions
  1. Empty cake mix in large bowl
  2. add the eggs , oil, sour cream , and crushed pineapple and mix well
  3. mix in the carrots, raisens, and walnuts
  4. spray cake pan with pan spray or lightly oil
  5. bake at 350 for 25-35 min. or until done
  6. let cool
  7. FROSTING;
  8. blend together the frosting , cream cheese and crushed pineapple
  9. frost cooled cake then sprinkle with chopped walnuts
