How to make it

  • Combine rice, egg, 1/4 cup cheese and onion then mix well.
  • Press onto bottom and sides of greased 9” pie plate.
  • Make a white sauce with margarine, flour, milk and salt.
  • Add remaining cheese then stir until well blended.
  • Stir in vegetables then spoon into rice shell.
  • Bake at 350 for 35 minutes.
  • Let stand 10 minutes before serving.
  • Sprinkle with additional cheese if desired.

    This does sound really good. I'm not a big fan of cooked carrots, so I think I'll try to substitue zucchini for them. Thanks for posting.
