Ingredients
  • Sponge cake
  • 125g caster sugar
  • 4 eggs
  • 1/2tablespoon cake emulsifier
  • 100 superfine flour
  • 1teaspoon vanilla essence
  • 45ml water
  • 65g corn oil or melted butter
  • Banana Mousse
  • (A)
  • 4000g mashed potato
  • 1/2g lemon(squeezed the juice out)
  • 1/8banana essence
  • (B)
  • 11/2 tablespoon gelatin powder
  • 25ml water
  • (C)
  • 200g non daily whipping cream
  • 21/2tablespoon icing sugar
  • For garnish
  • 150g non daily whipping cream
  • 1 banana thinly slice

Directions
  1. To make sponge cake
  2. Beat all ingredients (corn oil not included)until fluffy and and in oil and mix well.
  3. Pour batter into a lined an greased 20 square tin and bake for 108 Celsius for 35 to 45 minutes until cooked, remove and cool on a rack.
  4. Banana Mouse
  5. Double boil all ingredient (B) until desolved Beat (C) till stiff,
  6. (A) and (B) mix well.
  7. slice sponge cake into to 2 pieces in side way and place one piece in the 20cm loose base square tin. Pour banana mousse on the top and cover with another piece of the sponge cake and chill for 2 to 3 hours
  8. Whisk non daily whipping cream until stiff, spread on the mousse cake and placed the thinly sliced banana one over lapping the other on top
  9. Be sure to cut the banana last so the it wont oxidize.
