Country Brown Rice Dressing Recipe
This is a Holiday dish. But we have it most any time of the year especially when we have a nice sit down dinner with friends. We are crazy about it and we either serve it with pork roast, roast chicken or turkey or beef roast.

Ingredients
  • 1 cup brown rice
  • 3 cups sliced fresh mushrooms
  • 4 oz. bulk pork or turkey sausage
  • 1 cup chopped onion
  • 3/4 cups shredded carrots (small bag)
  • 1/2 cup dried cranberries or tart cherries
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp. chopped fresh basil

Directions
  1. In medium saucepan simmer rice and 2 cups water, covered 45 minutes or until tender.
  2. Meanwhile in large skillet cook mushrooms, sausage and onions until meat is done and vegetables are tender.
  3. Drain off any fat.
  4. Stir in carrots, cranberries,parsley and basil.
  5. Stir cooked rice into sausage mixture.
  6. Season with slat and pepper to taste
  7. Cook and stir until heated through.
