How to make it

  • combine all ingredients minus the raisins in a pot
  • stir to mix well and bring to a boil
  • reduce heat to low, cover and simmer for 20-25 minutes or until vegetables are tender
  • add raisins tothe pot and simmer 5 additional minutes.
  • serve over brown rice or couscous

    This sounds good, I like the idea of adding cinnamon and raisins. Never tasted these in combination with the other ingredients before, but I will try it.
