Southern Salsa Recipe
This is a recipe that was passed down to me by a school friend who moved to the south. It's wonderful with corn chips.

Ingredients
  • 1 16 oz can hominy, drained and rinsed
  • 1 16 oz can black beans, drained and rinsed
  • 1 16 oz can sweet corn, drained and rinsed
  • 1/2 c green onions, chopped
  • 1/4 c sugar
  • 1/4 c cider vinegar
  • 1/4 c canola oil
  • 1/2 c feta cheese, crumbled

Directions
  1. Combine hominy, beans, and corn with sugar, vinegar, and oil.
  2. Marinade for at least 4 hours, best if left overnight.
  3. Drain.
  4. Before serving add crumbled feta cheese and onions. Serve with tortilla chips.
