- 1 16 oz can hominy, drained and rinsed shopping list
- 1 16 oz can black beans, drained and rinsed shopping list
- 1 16 oz can sweet corn, drained and rinsed shopping list
- 1/2 c green onions, chopped shopping list
- 1/4 c sugar shopping list
- 1/4 c cider vinegar shopping list
- 1/4 c canola oil shopping list
- 1/2 c feta cheese, crumbled shopping list
How to make it
- Combine hominy, beans, and corn with sugar, vinegar, and oil.
- Marinade for at least 4 hours, best if left overnight.
- Drain.
- Before serving add crumbled feta cheese and onions. Serve with tortilla chips.
