Baked Chilies Rellenos

- 6 poblano peppers shopping list
- 2 cups sharp cheddar cheese shopping list
- 1 onion, chopped shopping list
- frozen beef or chicken fajitas shopping list
How to make it
- Brush each pepper with olive oil on both sides and roast on a cookie sheet. When peppers are done roasting, peel skin off. Make a slit in one side of the pepper and clean out seeds.
- Mix in a large bowl, the cheese and onion.
- Cook fajitas according to instructions on package and mix with cheese-onion mixture.
- Fill peppers with cheese mixture. Place in a glass casserole dish.
- Bake at 350 degrees for 15 minutes.
