How to make it

  • Brush each pepper with olive oil on both sides and roast on a cookie sheet. When peppers are done roasting, peel skin off. Make a slit in one side of the pepper and clean out seeds.
  • Mix in a large bowl, the cheese and onion.
  • Cook fajitas according to instructions on package and mix with cheese-onion mixture.
  • Fill peppers with cheese mixture. Place in a glass casserole dish.
  • Bake at 350 degrees for 15 minutes.
