Beef And Pepper Loaf Recipe
This recipe was one my Dad had from NJ newspaper. Not sure which one though. The servings are a guess as the recipe is about 20 years old and they didn't put it in the paper.

Ingredients
  • 3 Slices Dry Bread
  • 8 oz can of tomatoes
  • 2 Eggs
  • 2 Pounds ground beef
  • 1 Red or Green Bell Pepper, minced
  • 2 Tablespoons minced Parsley
  • 1 Teaspoon dried Oregano or Basil
  • 1 Clove minced Garlic
  • 1 1/2 Teaspoon Salt
  • 1/2 Teaspoon Fresh Ground Pepper
  • 3 Tablespoon Romano Cheese

Directions
  1. Break bread into tiny pieces and combine with the undrained tomatoes
  2. let bread soften about 10 minutes
  3. Add eggs, to tomato/bread mixture
  4. Mix well until tomatoes are broken up
  5. Add remaining ingredients, combining lightly until thoroughly blended
  6. Shape into a loaf
  7. Place on baking pan lined with foil
  8. Bake uncovered at 350, for an hour
