Roasted Vegetable Lahvosh

- 1 -15 inch wheat lahvosh cracker bread shopping list
- 1 container herb cheese, like Boursin shopping list
- 1 red, yellow, and green bell pepper, sliced into strips shopping list
- 2 medium tomatoes, chopped shopping list
- 1 yellow squash, sliced shopping list
- 1 small zucchini, sliced shopping list
- Assorted mushrooms, sliced, however many you want shopping list
- 1/2 of a medium onion, sliced into rings shopping list
- 3 cloves garlic, chopped shopping list
- extra virgin olive oil shopping list
- feta cheese ,use as much as you like shopping list
- 2/3 cup balsamic vinegar shopping list
- 2 Tbls honey shopping list
How to make it
- Preheat oven to 400 degrees.
- Put all the prepared vegetables in a ziploc bag, add enough olive oil to coat the vegetables, shake until vegetables are coated.
- Put onto a large sheet pan or in a 9x13 baking dish. Roast the vegetables 20 minutes or until a little browned and softened.
- Pour Balsamic vinegar and honey into a sauce pan. Turn burner to medium, Reduce until you have a thick syrup.
- Spread the herb cheese thinly, on the lahvosh. Put the roasted vegetables over the herb cheese, top with the feta.
- Drizzle the balsamic glaze lightly over the vegetables and cheese.
- Put back into the oven for 5 minutes. Cut with a pizza cutter into slices or squares. Enjoy
