BRUSCHETTA DI MAZZANCOLLE DA ZACCARIA Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996.

Ingredients
  • 4 tablespoons virgin olive oil
  • 2 garlic cloves peeled and sliced thin
  • 12 large shrimp peeled and deveined
  • 1 lemon juiced and zested
  • 2 ounces limoncello liqueur
  • 4 ounces dry white wine
  • 1 bunch chives snipped
  • 4 slices country style bread cut 3/4inch thick

Directions
  1. In 14 inch sauté pan heat oil over medium heat until just smoking.
  2. Add garlic and toast until light brown then add shrimp and cook 3 minutes.
  3. Turn shrimp over and add lemon juice, limoncello and wine then cook 1 minute.
  4. Meanwhile grill bread and place 1 slice on each plate then divide shrimp over bread.
  5. Add chives to pan and divide sauce over shrimp.
  6. Sprinkle with lemon zest and serve immediately.
