How to make it

  • C ook egg about 4 mins cool under cold water. peal 1/2 and remove yock keep white. mix yolk lemon juice and garlic in food processor keep motor running add olive oil in thin stream until thick. Add egg white and Parmesan, process for a few seconds season to taste add crab meat stir to combine
  • To serve, combine celery,apple and water cress in a bowl, layer salad with crab mix onto plates scatter with walnuts drizzle with oil and season
  • Enjoy with maybee a piot gris or a Spanish gadello
