A simple presentation from Bill Neal's Southern Cooking (1985). Good for anytime when a wholesome one dish meal is wanted (except for the rice-I highly recommend electric rice cookers for all occasions).
Ingredients
- 2 cups cooked black-eyed peas shopping list
- 2 cups cooked rice shopping list
- 1 cup chopped fresh tomato shopping list
- 1/2 cup finely chopped scallions shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp ground black pepper shopping list
- cheddar cheese, grated shopping list
How to make it
- Heat peas & rice separately if cold
- Combine peas and rice lightly in skillet
- Sprinkle chopped tomato and scallions over peas and rice
- Season w/ salt & pepper
- Cover and heat through
- Add grated cheddar cheese when serving
