Hoppin John Recipe
A simple presentation from Bill Neal's Southern Cooking (1985). Good for anytime when a wholesome one dish meal is wanted (except for the rice-I highly recommend electric rice cookers for all occasions).

Ingredients
  • 2 cups cooked Black-eyed peas
  • 2 cups cooked rice
  • 1 cup chopped fresh tomato
  • 1/2 cup finely chopped scallions
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Cheddar Cheese, grated

Directions
  1. Heat peas & rice separately if cold
  2. Combine peas and rice lightly in skillet
  3. Sprinkle chopped tomato and scallions over peas and rice
  4. Season w/ salt & pepper
  5. Cover and heat through
  6. Add grated cheddar cheese when serving

I forgot all about Hoppin John. Delicious simple dish.


Oh yea....I'm from the south and this is a great southern dish...especially to be eaten on New Years.
