Creamy Chicken Chowder Recipe
Thick and creamy but not too sinful - one of our favorite dinners.

Ingredients
  • 12 c. chicken broth
  • 2 cubes chicken bouillon
  • 1 c. celery, diced
  • ½ c. onion, diced
  • 1½ c. carrots, grated or chopped
  • ½ c. butter (I cut way back)
  • 12 oz. can evaporated milk
  • ½ c. water
  • 1½ c. flour
  • 4-6 boneless, skinless chicken breast, cubed or shredded
  • 3 c. potatoes peeled, cubed and cooked

Directions
  1. Combine broth, bouillon, celery, onion and carrots in a large pot; simmer until vegetables are tender.
  2. Stir in butter until melted; set aside.
  3. In a blender, mix milk, water and flour until smooth; add to soup mixture.
  4. Stir in chicken and potatoes and heat until warmed through.
