Baked Lamb With Aubergines And Good Stuff

- 8 lamb steaks shopping list
- 2 aubergines shopping list
- 16 cherry plum tomatoes (on the vine perhaps) shopping list
- 8 garlic cloves, skin on shopping list
- dried oregano shopping list
- fresh basil shopping list
- fresh mint shopping list
- red wine vinegar shopping list
- extra virgin olive oil shopping list
How to make it
- Preheat the oven to 200C (gas mark 6).
- Cut the aubergines into 1 inch slices, brush lightly with oil and fry on both sides until lightly coloured.
- Lay the aubergines in an oven dish.
- Place the tomatoes and garlic alongside the aubergines and sprinkle with oregano, basil and seasoning.
- Season the lamb and fry until golden on all sides, then place alongside the other ingredients, drizzled with a little oil.
- Bake for 30 minutes until only slightly pink.
- Accompany with mint oil: bash up the mint with a pinch each of salt and sugar and add 2 tablespoons of red wine vinegar and 6 tablespoons of extra virgin olive oil.
- We ate it with minty mashed potatoes too. Yum!
