How to make it

  • Preheat the oven to 200C (gas mark 6).
  • Cut the aubergines into 1 inch slices, brush lightly with oil and fry on both sides until lightly coloured.
  • Lay the aubergines in an oven dish.
  • Place the tomatoes and garlic alongside the aubergines and sprinkle with oregano, basil and seasoning.
  • Season the lamb and fry until golden on all sides, then place alongside the other ingredients, drizzled with a little oil.
  • Bake for 30 minutes until only slightly pink.
  • Accompany with mint oil: bash up the mint with a pinch each of salt and sugar and add 2 tablespoons of red wine vinegar and 6 tablespoons of extra virgin olive oil.
  • We ate it with minty mashed potatoes too. Yum!
