Baked Lamb With Aubergines And Good Stuff Recipe

Ingredients
  • 8 lamb steaks
  • 2 aubergines
  • 16 cherry plum tomatoes (on the vine perhaps)
  • 8 garlic cloves, skin on
  • dried oregano
  • fresh basil
  • fresh mint
  • red wine vinegar
  • extra virgin olive oil

Directions
  1. Preheat the oven to 200C (gas mark 6).
  2. Cut the aubergines into 1 inch slices, brush lightly with oil and fry on both sides until lightly coloured.
  3. Lay the aubergines in an oven dish.
  4. Place the tomatoes and garlic alongside the aubergines and sprinkle with oregano, basil and seasoning.
  5. Season the lamb and fry until golden on all sides, then place alongside the other ingredients, drizzled with a little oil.
  6. Bake for 30 minutes until only slightly pink.
  7. Accompany with mint oil: bash up the mint with a pinch each of salt and sugar and add 2 tablespoons of red wine vinegar and 6 tablespoons of extra virgin olive oil.
  8. We ate it with minty mashed potatoes too. Yum!
