How to make it

  • Prep the bell pepper by slicing and then cutting slices into medium sized pieces
  • Place oil in large skillet and place on med heat
  • Add diced shallots and minced garlic to skillet and lightly brown
  • Add red pepperr and Asparagus and saute. Stirring sparingly till Asparagus has light searing on each side.
  • Add Vinegar to the veggies and stir mixture till the Vinegar smells sweet
  • Take off heat add salt and pepper stir and top with goat cheese crumbles (optional)
