Chicken Nuggets

- 2 tbsp. vegetable oil shopping list
- 1 tbsp. Dijon prepared mustard shopping list
- 3 chicken breasts, boneless, skinless shopping list
- Crumb Coating: shopping list
- 1 cup whole brown rice flour shopping list
- 1 tsp. chili powder shopping list
- ½ tsp. paprika shopping list
- salt and pepper to taste shopping list
- ¼ tsp. oregano shopping list
How to make it
- Coating:
- Place all coating ingredients in a shaker bag and mix well.
- Mix oil and mustard in a bowl. Cut the chicken into nugget sized pieces and add to mixture. Coat thoroughly. In a plastic bag with crumb coating, put a few pieces at a time, shaking well to coat them.
- On a baking sheet lined with tin foil, place the pieces so they don’t touch, in a single layer. Bake at 400F for 15 mins. or until done.
