Ingredients
  • 2 tbsp. vegetable oil
  • 1 tbsp. Dijon prepared mustard
  • 3 chicken breasts, boneless, skinless
  • Crumb Coating:
  • 1 cup whole brown rice flour
  • 1 tsp. chili powder
  • ½ tsp. paprika
  • salt and pepper to taste
  • ¼ tsp. oregano

Directions
  1. Coating:
  2. Place all coating ingredients in a shaker bag and mix well.
  3. Mix oil and mustard in a bowl. Cut the chicken into nugget sized pieces and add to mixture. Coat thoroughly. In a plastic bag with crumb coating, put a few pieces at a time, shaking well to coat them.
  4. On a baking sheet lined with tin foil, place the pieces so they don’t touch, in a single layer. Bake at 400F for 15 mins. or until done.
