Egg And Cheese Rarebit Recipe

Ingredients
  • 9 eggs
  • 9 oz. grated cheese, chedder, jack, etc.
  • 2 tbsp. butter
  • ½ cup whole milk
  • 1 tsp. celery salt
  • pepper
  • ¼ tsp. paprika

Directions
  1. Beat eggs very well in a medium bowl, then add seasonings and mix well. In a double boiler, melt butter then add grated cheese. Stir ocassionally until melted and mixed with butter. Once melted, add the egg mixture and stir. It will not all mix together at first. Stir every 2 mins. scraping sides and bottom VERY well, and mixing scrapings into uncooked part.
  2. After a while it will start to resemble scrambled eggs. Continue stirring and scraping until all of it is cooked, but NOT dry. Serve immediately over whole grain toast, brown rice or whole grain pasta.
  3. I use individual serving bowls and divide it between bowls.
  4. Good with blueberries, strawberries, or peaches as a side dish.

Well, this is not exactly how I make this right now. I make a dairy free version for me, and the rest is the same for the family. LOL

But one day maybe I will make it like this for all of us. :))
