Easy cheesecake

- 1 packet Marie or Tennis biscuits shopping list
- 4 Tbsp unsalted butter, melted shopping list
- 3 large eggs shopping list
- 1 cup castor sugar shopping list
- 750g cream cheese shopping list
- 1 cup fresh cream shopping list
- juice of 1 lemon shopping list
- 1 Tbsp flour (yes, really) shopping list
- 1 tsp vanilla essence shopping list
How to make it
- Preheat oven to 160 degrees Celsius. Place a baking tray of water in the bottom of the oven to prevent cheesecake from cracking or bake cake in water bath.
- For crust: Combine biscuits and butter until crumbly and moist and press into greased springform cake tin(about 22 cm). Refrigerate until needed.
- For filling: Beat eggs and sugar on slow speed so as not to incorporate too much air.
- Beat in cheese.
- Stir in cream and mix well.
- Add the lemon juice, vanilla essence and sift in flour. Beat well.
- Pour mixture into base and bake at 160 Celsius until just firm, about 60 minutes.
- Leave in oven, with door slightly open, to cool. When cooled completely, place in refrigerator to set.
- Serve at room temperature, preferably next day so that flavours have developed fully.
