Cocolate Mud Cake With Ganache

- 225g butter shopping list
- 350g dark cooking chocolate~chopped shopping list
- 1/3 cup warm water shopping list
- 5 eggs separated shopping list
- 11/4 cups caster sugar shopping list
- 11/2 cups ground almonds shopping list
- 2/3 cup plain flour~shifted shopping list
- 1 table spoon of rum or brandy shopping list
- Ganache shopping list
- 200g dark chocolate~ chopped shopping list
- 200g butter shopping list
How to make it
- Preheat oven to moderate 180C
- Brush a deep 20cm round tin wit oil or melted butter
- line the base and sides with baking paper
- Melt butter and chocolate in pan over low heat
- add water;stir till smooth.
- Remove fro heat and cool.
- Beat eggs yolks and sugar until thick and pale,
- Using metal spoon, fold in the chocolate mixture
- Then combined almond and flour
- Stir until smooth; add liquor
- Beat egg white in separate bowl until soft peak is form
- fold into the mixture
- Spoon into the prepared tin;smooth surface
- Bake for one hour or until skewer comes out clean when inserted in the center or the cake.
- To make ganache
- Melt chocolate and butter in pan in low heat
- Stir till smooth
- Cool; stir occasionally an until spreadable
- Spread a third fo ganache on top and another 3rd around the cake.
- Pipe rosettes or swirls around the outer edges
