How to make it

  • Preheat oven to moderate 180C
  • Brush a deep 20cm round tin wit oil or melted butter
  • line the base and sides with baking paper
  • Melt butter and chocolate in pan over low heat
  • add water;stir till smooth.
  • Remove fro heat and cool.
  • Beat eggs yolks and sugar until thick and pale,
  • Using metal spoon, fold in the chocolate mixture
  • Then combined almond and flour
  • Stir until smooth; add liquor
  • Beat egg white in separate bowl until soft peak is form
  • fold into the mixture
  • Spoon into the prepared tin;smooth surface
  • Bake for one hour or until skewer comes out clean when inserted in the center or the cake.
  • To make ganache
  • Melt chocolate and butter in pan in low heat
  • Stir till smooth
  • Cool; stir occasionally an until spreadable
  • Spread a third fo ganache on top and another 3rd around the cake.
  • Pipe rosettes or swirls around the outer edges
