I bet this would go good with Mystics Potato chip chicken.;-)
Ingredients
- 2 cups fresh peaches -- peeled & diced shopping list
- 1/2 cup red onion -- diced shopping list
- 1/2 cup red bell pepper -- diced shopping list
- 1/2 teaspoon jalapeno -- minced shopping list
- 2 teaspoons olive oil shopping list
- 2 tablespoons lime juice shopping list
- 1/4 cup fresh mint -- minced shopping list
- 2 teaspoons fresh ginger -- grated shopping list
How to make it
- Combine all ingredients. Let flavors mellow for 30 minutes and serve.
