Tofu Corn Spinach Breakfast Scramble Recipe
Basic, peppery breakfast scramble takes less than 15 minutes from start to finish. Corn adds a refreshing, crunchy texture to contrast silken tofu and spinach.

Ingredients
  • 12 oz firm silken tofu
  • 1/4 c cooked rice or quinoa
  • 3/4 c frozen spinach
  • 3/4 c frozen corn
  • 2 Tbsp chili powder
  • 1/2 tsp chipotle pepper
  • 1 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp fresh ground black pepper
  • Canola or other vegetable oil
  • Dash of brewer's yeast (optional)
  • 1 Tbsp Bragg's Liquid Aminos (optional)

Directions
  1. Heat oil in a steel skillet on low while assembling other ingredients
  2. Increase heat to medium, add corn, rice, and spinach, cook 5 min, stirring occasionally
  3. Add silken tofu, hand-crumbled directly into pan, stir well
  4. Add all spices, adjust levels to suit your tastes
  5. Optional: Sprinkle nutritional yeast, if desired
  6. Cook another 6-10 minutes, stirring occasionally
  7. Optional: Mix in Bragg's Liquid Aminos, if desired
  8. Remove from heat
  9. Add salt to taste, serve
