How to make it

  • Start water boiling for pasta.
  • Shell and de-vein the prawns, leaving the tails intact. Put aside.
  • In a heavy frying pan, heat butter and garlic until sizzling. Add drained tomatoes, fry for 2 minutes. Add lime juice and prawns. Cook for 2 minutes.
  • Add double cream and lime zest. Simmer until pasta is cooked.
  • Drain pasta and add to sauce with parsley. Serve in bowls with cracked pepper and Parmesan cheese

    Just made this and it was lovely. I modified a bit using a little less cream (I might try single, low fat or creme fraiche next time to see if it's just as nice), a tin of chopped tomatoes with garlic plus a single garlic clove and a couple of chopped shallots, and I used fusili pasta instead of linguini. It's definitely something we'll do again - lime is the key ingredient for this- very nice. Thanks!!
