Creamy Lime And Prawn Pasta Recipe
Creamy tomato sauce linguini with lime. Perfect with prawns or chicken.

Ingredients
  • 500g prawns (uncooked)
  • zest 1 lime
  • juice 1 lime
  • 1 tablespoon butter
  • 1 can Roma tomatoes, drained
  • 300ml double cream
  • 2 cloves garlic, finely chopped
  • fresh parsley, roughly chopped
  • ½ packet dried linguine

Directions
  1. Start water boiling for pasta.
  2. Shell and de-vein the prawns, leaving the tails intact. Put aside.
  3. In a heavy frying pan, heat butter and garlic until sizzling. Add drained tomatoes, fry for 2 minutes. Add lime juice and prawns. Cook for 2 minutes.
  4. Add double cream and lime zest. Simmer until pasta is cooked.
  5. Drain pasta and add to sauce with parsley. Serve in bowls with cracked pepper and Parmesan cheese

Just made this and it was lovely. I modified a bit using a little less cream (I might try single, low fat or creme fraiche next time to see if it's just as nice), a tin of chopped tomatoes with garlic plus a single garlic clove and a couple of chopped shallots, and I used fusili pasta instead of linguini. It's definitely something we'll do again - lime is the key ingredient for this- very nice. Thanks!!
