How to make it

  • In a large pot boil the sweet potatoes for 20 minutes (or until fork tender) drain, allow to cool and remove skins
  • Preheat oven to 350 degrees Grease or BUTTER one 2 quart ( or larger) casserole dish
  • Place potatoes in a mixing bowl, beat on low until the potatoes begin to break up then increase the speed to medium and blend 'till smooth
  • Reduce speed to low and add sugar, milk, BUTTER, vanilla, eggs and salt. Mix well
  • Discard any potatoe fibers that remain on the beater. Pour potatoe mixture into the prrepared casserole dish
  • PREPARE THE TOPPING
  • In a small bowl whisk together the brown sugar, flour, BUTTER and pecans. Sprinkle over the potatoe mixture and bake for 40 minutes
