Sweet Potatoe Souffle

- 5-6 sweet potatoes shopping list
- 1 cup of White sugar shopping list
- 1/2 Cup of milk shopping list
- 1/2 Cup of Melted butter (no subs allowed) shopping list
- 1 teaspoon vanilla extract shopping list
- 2 eggs beaten shopping list
- 1/2 teaspoon salt shopping list
- 1 cup brown sugar shopping list
- 1/3 cup all purpose flour shopping list
- 1/3 cup melted butter (yes they still use the stuff) shopping list
- 1 cup chopped pecans shopping list
How to make it
- In a large pot boil the sweet potatoes for 20 minutes (or until fork tender) drain, allow to cool and remove skins
- Preheat oven to 350 degrees Grease or BUTTER one 2 quart ( or larger) casserole dish
- Place potatoes in a mixing bowl, beat on low until the potatoes begin to break up then increase the speed to medium and blend 'till smooth
- Reduce speed to low and add sugar, milk, BUTTER, vanilla, eggs and salt. Mix well
- Discard any potatoe fibers that remain on the beater. Pour potatoe mixture into the prrepared casserole dish
- PREPARE THE TOPPING
- In a small bowl whisk together the brown sugar, flour, BUTTER and pecans. Sprinkle over the potatoe mixture and bake for 40 minutes
