Ingredients
  • 5-6 Sweet Potatoes
  • 1 cup of White Sugar
  • 1/2 Cup of Milk
  • 1/2 Cup of Melted Butter (no subs allowed)
  • 1 teaspoon vanilla extract
  • 2 eggs beaten
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/3 cup all purpose flour
  • 1/3 cup melted butter (yes they still use the stuff)
  • 1 cup chopped pecans

Directions
  1. In a large pot boil the sweet potatoes for 20 minutes (or until fork tender) drain, allow to cool and remove skins
  2. Preheat oven to 350 degrees Grease or BUTTER one 2 quart ( or larger) casserole dish
  3. Place potatoes in a mixing bowl, beat on low until the potatoes begin to break up then increase the speed to medium and blend 'till smooth
  4. Reduce speed to low and add sugar, milk, BUTTER, vanilla, eggs and salt. Mix well
  5. Discard any potatoe fibers that remain on the beater. Pour potatoe mixture into the prrepared casserole dish
  6. PREPARE THE TOPPING
  7. In a small bowl whisk together the brown sugar, flour, BUTTER and pecans. Sprinkle over the potatoe mixture and bake for 40 minutes
