Macaroni And Cheese With Tofu

- 12 ounces of pasta such as elbows, small shells and farfalle shopping list
- 12 ounces of low-fat silken tofu shopping list
- 1/2 cup low-fat milk shopping list
- 1 cup grated extra sharp cheddar cheese, packed shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1/2 teaspoon minced garlic shopping list
- 1 teaspoon yellow mustard shopping list
- 1/2 teaspoon salt, more to taste shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1/4 cup fresh parsley shopping list
- 1/2 cup bread crumbs mixed with 1/4 cup grated cheddar cheese shopping list
How to make it
- Preheat oven to 350 degrees
- Spray a 2 quart baking dish with oil
- Bring a large covered pot of lightly salted water to boil.
- When water boils, stir in the pasta, cover the pot, and return to a boil. Cook until al dente.
- Meanwhile, in a food processor, combine all the cheese sauce ingredients (except parsley and bread crumbs) and pulse until smooth.
- Add more salt to taste.
- Drain cooked pasta. In a large bowl mix together pasta and cheese sauce. Stir in parsley and spoon pasta into baking dish.
- Top with bread crumb mixture.
- Bake covered for about 30 minutes, then uncover and bake for 5 minutes more.
