Rock Cornish Hens Recipe
I always double this and serve for guests. It is not too hard and the rewards are great!! I Originally got this from an Brennan's cookbook from the '60's i change this up (spice) all the time for however I feel.

Ingredients
  • 1/2 cup butter
  • 1cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup shallots
  • 1/2 cup cup ham
  • 1 1/2 oysters
  • 2 eggs, beaten slitghly
  • 4 cups of bread soaked in Oyster water squeezed dry
  • 1 tsp ground thyme
  • 2 bay leaves
  • S & P to taste
  • 2 Tbs parsley
  • 2 boned Rock Hens

Directions
  1. preheat oven to 350
  2. In large skillet melt butter, saute onion, celery, shallots and ham.
  3. Add Oysters and heat though.
  4. Remove from heat, stir in eggs and bread. Mix.
  5. Return to heat and add thyme, S & P and parsley. Heat through.
  6. Stuff hens with mixture and tie legs together.
  7. Brush w/ meted butter, sprinkle S & P .
  8. Bake in 350 oven for 1 hour or until done.
  9. Sauce:
  10. Remove Roasted hens to serving platter; keep warm.
  11. Blend drippings, 2 tsb flour and prepare roux..
  12. Stir in chicken stock until smooth.
  13. Strain and serve over hens.
