Scrambled Tofu Recipe
Great dish for breakfast ot anytime. We often have it for dinner with toast, just like scrambled eggs!

Ingredients
  • 1 tbs oil
  • 1 tbs butter
  • 1/2 tsp turmeric for color (optional)
  • 1 block firm or extra firm tofu, crumbled into med/lg size chunks
  • salt and pepper to taste
  • OPTIONAL additions:
  • sauteed onions
  • chopped vegetarian hot dog pieces
  • most other things you'd like in an omelet or scrambled egg dish
  • you can even add a cage free egg or two if you'd like it more "eggy" and you're vegetarian, not vegan!

Directions
  1. Heat oil and butter in a skillet over medium heat.
  2. Add rest of ingredients, stir well.
  3. Season to taste.
  4. Cook 5-6 mins or til eggs if you add them are cooked through.
  5. Delicious served with toast or accompanying any breakfast fare.
  6. Great for a really quick dinner!
