Achari Peppers

- 12 count mild peppers (pablano, anaheim, or even small green bell peppers) shopping list
- 1/2 cup fresh lemon juice shopping list
- 1 packet Shan Achar gosht spice mix OR shopping list
- >1 tsp Chilli powder shopping list
- >1 tsp salt shopping list
- >1 tsp coriander powder shopping list
- >1 tsp fennel seeds shopping list
- >1 tsp fenugreek seeds shopping list
- >1 tsp cumin powder shopping list
- >1 tsp garam masala powder or allspice shopping list
- >1 tsp Nigella seeds shopping list
- >1 tsp mace shopping list
- >1/2 tsp black pepper powder shopping list
- 1 cup plain yogurt shopping list
- 1 medium onion finely chopped shopping list
- 1 tsp garlic paste shopping list
- 2 tbsp oil shopping list
How to make it
- Mix Shan Achar Gosht mix (or all the dry ingredients above), garlic paste and lemon juice, set 2/3 aside for filling. Add remaining 1/3 to yogurt for curry sauce later.
- Wash peppers and pat dry. Slit in two halfway taking care not to cut into two pieces, the stem side should remain intact for filling them. Deseed peppers, fill slighly with the achar gosht/ lemon mixture coating all the way through. Let marinate for at least half hour.
- Heat oil, add onion and saute lighly, turn the heat to low, add peppers very carefully to the pan, shift pan to coat the peppers with oil. Pour yogurt on top, stir the pan using handles slightly. Turn the heat to medium-low and let simmer for half an hour checking occasionally that the peppers do not burn.
- Serve with pita or on rice.
