Ingredients
  • 1/2 cup Hellmann's Mayo (Hellmann's is not as vinegary tasting as others).
  • 1 cup sugar (or Splenda)
  • 1 egg slightly beaten
  • 1 tsp baking soda
  • 1 pinch salt
  • 3 medium bananas, mashed
  • 1 1/2 cup flour
  • 1/2 cup cranberries
  • 1/2 cup pecan pieces (set some aside for topping)
  • 3 tbsp. maple syrup (or sugar free pancake syrup)

Directions
  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan.
  3. Mash bananas in a medium sized bowl.
  4. Beat egg and add to bananas.
  5. Add all other ingredients (with the exception of maple syrup & extra pecans) and stir to mix well.
  6. Pour mixture into a greased loaf pan
  7. Mix the extra pecan pieces with the maple syrup and place on top of mixture as a topping.
  8. Bake at 350 degrees F for 1 hour.
  9. Let cool before slicing.
