Ingredients
  • 3 boneless, skinless chicken breasts, cut into small pieces
  • 1 onion, chopped
  • 1 clove chopped garlic
  • 1 TBSP olive oil
  • Several sprigs fresh thyme
  • 5 carrots, sliced
  • 3 stalks of celery with tops, sliced
  • 5 parsnips, sliced
  • Salt & pepper to taste
  • 48 oz. chicken stock
  • ½ of a 12 oz. pkg. wide whole wheat noodles

Directions
  1. Heat pan and add olive oil.
  2. Sauté onion until slightly tender;
  3. add garlic, salt, and pepper, and sauté for a few more minutes;
  4. add chicken stock, chicken, and thyme;
  5. bring to a simmer and cook for 20 minutes;
  6. add carrots, celery, and parsnips and cook for 20 minutes;
  7. Remove thyme stems, pull leaves from stems and add back to soup
  8. add noodles and cook another 15 minutes, until noodles are tender.
