Wind Clan Smoked Salmon Pasta Recipe
WIND CLAN SMOKED SALMON PASTA This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 6 ounces penne or ziti pasta
  • 1 tablespoon butter
  • 2 medium zucchini halved lengthwise and sliced
  • 1 teaspoon bottled minced garlic
  • 1 cup whipping cream
  • 3/4 teaspoon lemon pepper seasoning
  • 8 ounces smoked salmon skin and bone removed and flaked
  • 1/4 cup grated parmesan cheese

Directions
  1. Cook pasta according to package directions then drain well and keep warm.
  2. In a large skillet melt butter then add zucchini and garlic.
  3. Cook and stir until zucchini is crisp tender about 4 minutes then remove from skillet.
  4. Add whipping cream and lemon pepper seasoning to skillet then bring to boiling.
  5. Reduce heat and boil gently for 5 minutes or until sauce thickens slightly.
  6. Set aside 1/2 cup of the smoked salmon and stir remaining salmon into sauce.
  7. Remove sauce from heat then add warm pasta, zucchini and the parmesan.
  8. Toss gently to coat with sauce then garnish with reserved salmon.
