How to make it

  • In large stove top pan, brown chicken breasts in olive oil
  • Add onions and continue browning onions and chicken
  • Add garlic, jalapenos, cilantro, and diced tomatoes
  • Stir well
  • Cover and simmer for 40 minutes (or longer)
  • Serve over brown rice
