Carrot Cake

- Mix together in a large bowl: shopping list
- 2 cups all-purpose flour shopping list
- 2 cups sugar shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons baking soda shopping list
- Add to the dry ingredient mixture: shopping list
- 1 1/2 cup cooking oil shopping list
- 4 eggs - one at time, blending after each egg is added shopping list
- 2 cups fresh, finely grated carrots - do not buy already prepared shopping list
- 1 can crushed pineapple with juice (8 oz. size) shopping list
- icing - Mix together: shopping list
- 8 oz. cream cheese, softened shopping list
- 1 stick of butter or margarine shopping list
- 16 oz. Confectioner's sugar shopping list
- 1 cup chopped pecans shopping list
- 4 oz. coconut shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease and flour three 9 inch cake pans.
- Mix all ingredients well and pour into pans.
- Bake for 30 minutes. Let cakes cool in pans.
- Once cake is cooled, remove from pans and put icing on top of each layer and sides.
- This cake also freezes well if you want to make it in advance. Use an airtight storage container.
