This is absolutely THE best carrot cake you will ever make or serve.

Ingredients
  • Mix together in a large bowl:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • Add to the dry ingredient mixture:
  • 1 1/2 cup cooking oil
  • 4 eggs - one at time, blending after each egg is added
  • 2 cups fresh, finely grated carrots - do not buy already prepared
  • 1 can crushed pineapple with juice (8 oz. size)
  • Icing - Mix together:
  • 8 oz. cream cheese, softened
  • 1 stick of butter or margarine
  • 16 oz. Confectioner's sugar
  • 1 cup chopped pecans
  • 4 oz. coconut

Directions
  1. Preheat oven to 350 degrees.
  2. Grease and flour three 9 inch cake pans.
  3. Mix all ingredients well and pour into pans.
  4. Bake for 30 minutes. Let cakes cool in pans.
  5. Once cake is cooled, remove from pans and put icing on top of each layer and sides.
  6. This cake also freezes well if you want to make it in advance. Use an airtight storage container.
